Turkey and Tofu Kabobs

Fire up the barbecue for these smart skewers

1 large boneless turkey breast, cubed

V2 package firm-style tofu, cut into large cubes

8 cherry tomatoes

8 pearl onions

1 bottle low-fat Italian salad dressing

In a shallow dish, marinate all ingredients in salad dressing for at least two hours or overnight in the refrigerator. Arrange ingredients on 4 to 6 skewers and place in broiling pan.

Barbecue or broil, uncovered, basting with remaining marinade and turning skewers once or twice, until done.

Serves 2.
