Tomato and Onion Scramble

Cutting back on the yolks keeps eggs on the menu

Combine eggs, tomato, onion, tofu, oregano, salt and pepper in a bowl. Heat a heavy frying pan coated with cooking spray and add the mixture, scrambling until the eggs begin to solidify. Add cheese and cook for a few more minutes, until the desired consistency is reached.

Makes 2 servings.

1 egg, 4 whites

V2 c. chopped tomato

V2 c. chopped onion

V4 c. firm-style tofu, crumbled or grated pinch of oregano, dill or parsley (optional)

salt and pepper, to taste low-fat butter-flavoured cooking spray

V4 c. grated low-fat mozzarella or white cheddar cheese
