Classic Tofu Stir Fry

An Asian-inspired one-dish meal that's sure to satisfy

Over medium-high heat, lightly coat a wok or large frying pan with cooking spray. Add tofu, garlic and ginger and cook, stirring, until tofu is slightly browned. Add mushrooms and onions and cook, stirring, until lightly browned.

Add pepper, carrots and sauce (mix soy sauce, teriyaki sauce, vinegar, honey, stock and water). Stir over medium to high heat until sauce bubbles and thickens and carrots are cooked through. Serve over brown rice.

Makes 2 generous servings.

1 package firm-style tofu, cut into cubes

2 cloves garlic, crushed

1 tsp. ginger, finely minced 4-6 shiitake mushrooms, sliced 1 medium onion, chopped

1 green or red pepper, chopped

2 carrots, diced

1 c. bok choy, chopped non-stick cooking spray

3 tbsp. lite soy sauce 1/8 c. teriyaki sauce

1 tbsp. rice vinegar 1 tbsp. honey V3 c. vegetable stock 1/4 c. water
