Conclusions

Oilseeds, similar to other plant sources, provide an important reservoir of a myriad of phytochemicals. While some of the phytochemicals present may possess harmful effects when consumed in large amounts, the beneficial health effects of such components when used in appropriate quantities is well documented. To keep the balance, use of intact or crushed whole seeds, such as those of flax and sesame, together with other plant-based material, in food formulations and in baked products is recommended.
