A 3V2-ounce portion of deep-fried turkey with the skin on has about 12 grams of fat, compared with 10 grams in a 3V2-ounce portion of roasted turkey (white and dark meat) with the skin on. However, if the cooking oil remains at 340°F or less, more oil seeps into the turkey meat, adding to the fat content. For the record, without the skin, the same amount of roasted turkey (white and dark meat) has 5 fat grams.
