  • Choose milk that matches your needs. No matter what type, milk is an excellent source of calcium. Milk also provides protein, riboflavin, vitamins A and D, phosphorus, potassium, magnesium, and other vitamins and minerals. How do the various forms of milk differ?   • If you're sensitive to lactose, or milk sugar, look for lactose-reduced or lactose-free milk. By adding the enzyme lactase, dairy foods have much less lactose. See chapter 21 for more on lactose intolerance.
