Buckwheat Pancakes

The flavor of buckwheat just goes with maple syrup, so buckwheat flour makes terrific pancakes. Make sure the flour is 100 percent buckwheat.

1 cup buckwheat flour

2 tablespoons cornstarch xh teaspoon salt

1 teaspoon baking soda 1 cup orange juice V cup maple syrup Oil for cooking

Preheat a stovetop grill pan or skillet over medium heat. In a medium-size mixing bowl, combine the buckwheat flour, cornstarch, salt, and baking soda. Add the orange juice and maple syrup, and combine.

Put a small amount of oil on the grill or skillet. Ladle enough batter onto the grill to make 4- to 5-inch pancakes. Cook until the edges of the pancakes start to look dry. Flip pancakes, and cook for an additional minute. Serve with maple syrup, fruit preserves, or a bit of honey butter.

Makes 8 to 10 pancakes
