Betsys Tuna Melt

My mom loves tuna melts. In fact, she has been known to get excited when she spots a tuna melt on a restaurant menu. This recipe is how she eats her tuna melts these days.

1 6-ounce can water-packed light tuna, drained

1 tablespoon minced onion

1 tablespoon mayonnaise

V teaspoon mustard (check labels)

Salt to taste

Pepper to taste

4 rice cakes (check labels)

4 slices low-fat cheddar cheese

Mix together tuna, onion, mayonnaise, mustard, salt, and pepper. Spread on rice cakes, and top each with a cheese slice. Heat under broiler until cheese melts.

Variations: Add chopped dill pickle or celery to the tuna mixture; place a tomato slice under the cheese slice; or sprinkle Italian herbs on top of the cheese.

Important note: Many rice cake packages advise against heating rice cakes, although we have never experienced a problem when doing so.
