Taking lunch to work

Many of the recipes in this chapter travel well and are ideal to take to work for lunch to be reheated or eaten as they are, or they can be taken on a picnic. Also, if you have leftovers from dinner, especially vegetables, then they can often become the next day's lunch too. If you are taking a salad, we suggest you leave the dressing separate, to add just before serving.

KATHY: The evening meal is my favourite, relaxing with my husband Peter, discussing the day over a plate of good food. It's never a chore to cook and when I am detoxing, I usually have so much more energy, I whip around the kitchen even faster. I eat a large variety of food over a week, including plenty of vegetables and leafy greens and lots of seafood. The only dish I really miss when I am detoxing is roast chicken (I can't bear to forego the crisp skin) but the Asian-style Poached Chicken (page 96) is so good it helps to fill the gap. If I go out to eat when I'm detoxing, I look for seafood on the menu.

JAN: My partner Gavin is as passionate about food as I am. We often cook our meals together (quite harmoniously) with one of us taking the role of 'head chef' while the other is 'kitchen hand'. We really enjoy sitting down at the table to enjoy the fruits of our labour together. Our meals are generally so healthy that doing a detox might mean foregoing that fabulous red or white wine, pasta or couscous - the rest is easy. Whether detoxing or not, vegetables are abundant in our dinner meals.

These dishes are a Little more substantial than the recipes in the Lunch chapter and some require a bit more preparation, but essentially they are stylish and based on flavour and freshness.

One of the key factors in maintaining a successful detox is not to feel deprived, so it's a good idea to write a simple menu plan for the week. That way, you know you have delicious meals to look forward to. This will also help with the shopping. Make sure you have a stock of dry goods such as rice, polenta, noodles and quinoa on hand and where possible shop daily for fresh ingredients. In the evening, make yourself a fresh juice to sip on while you are preparing dinner.

We have created dishes that are so appetising, the whole family will love them even if they are not detoxing. If you are dining out, it's easy - order simple dishes such as grilled fish or chicken with side dishes of salad (ask for it without the dressing) and vegetables, or choose a restaurant that has a large selection of vegetarian dishes. Asian-style restaurants, particularly Vietnamese, Indian or Japanese restaurants, are a good choice.

With our list of stylish recipes to hand, it's also easy to entertain while you are detoxing. Your friends will love the food and you will find that many of these recipes will become standbys whether you are detoxing or not.
