This is a substitute for thickened cream and teams particularly well with fruit desserts. You can flavour the cream with finely grated orange, lime or lemon rind and use a little of the citrus juice in place of the same quantity of water. Here we keep the flavour quite neutral to make it a good all-rounder recipe. Unlike regular dairy cream, this cream is a good source of dietary fibre as well as calcium.
185 ml (3/4 cup) water 150 g (1V2 cups) almond meal 95 g C/2 cup) plain soy yoghurt 1 tbsp honey
Place water, almond meal, yoghurt and honey in a jug and use a hand blender to mix until the consistency of thickened pouring cream. Alternatively, place in a blender jug and blend until well combined.
