The above efforts result in a product we have been referring to as chocolate liquor, the common name in the USA; to the rest of the world, it is cocoa mass. Other names are baking chocolate, cooking chocolate and chocolate. Chocolate liquor processed in the above manner is described as natural liquor. The next section describes a process producing a second liquor type.

Alkalization

The alkalizing process is applied to modify the flavor and color of chocolate liquors and cocoa powders. It is also known as Dutch processing. The starting material can be cocoa cake, nibs or chocolate liquor. Although confirming figures have not been located, nibs and cake are the most common starting materials
